How they compare: both are enameled cast iron made in France with superb heat retention. Staub’s textured black matte interior is the better searing surface and its lid spikes drip moisture back onto food. Le Creuset’s smooth sand colored interior releases food more easily and lets you see exactly how dark your fond is getting. Fit and finish are flawless on both.

Price comparison: Le Creuset lists at $454.95 and Staub at $429.99 for the 5.5 quart round. Both go on sale, with Staub discounted more often and more deeply. At street prices the gap often disappears, making this a pure preference call.
